Captain

Role & Responsibilities
- Assist in restaurant daily operations and supervise the team
- Perform duties of Restaurant in-charge in the absence of Restaurant Manager
- Provide attentive and efficient service to meet members’ satisfaction
- Serve and deal with members in a professional and courteous manner
- Set up the restaurant to ensure products and condiments are ready
- Maintain restaurant hygiene and cleanliness throughout the day
Requirements
- Secondary education or Diploma in food & beverage or related discipline
- (For Captain) Minimum 3 years of relevant experience in the food and beverage industry, preferably in club or hotel industry
- (For Waiter/ Waitress) Minimum 1 year of relevant experience in the food and beverage industry, exposure in club or hotel industry will be advantageous
- A good team player with strong leadership to motivate, train and supervise subordinates
- Excellent communication skills and telephone manner
- Good command of spoken English and Cantonese
- Willing to work on shifts, weekends and public holidays

Requirements

- Good interpersonal skills and telephone manner
- Good command of spoken English and Cantonese

Chief Steward
Responsibilities
- Lead and manage the stewarding team to ensure smooth daily operations in all stewarding areas and staff canteen
- Oversee the inventory flow and supply of chinaware, flatware, glassware, and equipment, including rigorous stock control and timely replenishment
- Monitor and optimize departmental expenses and labor costs in strict alignment with the approved annual budget
- Uphold the highest standards of cleanliness and safety for dishwashers, kitchens, waste areas, and cold storage through meticulous inspections and scheduled deep cleaning.
- Responsible for the selection and application of cleaning agents and procedures to ensure full compliance with Club hygiene and safety regulations
- Provide timely stewarding support and equipment to Restaurant and Banqueting operations to achieve member and guest satisfaction
- Maintain effective communication with the team, senior management, relevant government departments and external contractors on operational, hygiene and environmental matters
Requirements
- Degree or Diploma holder in Food & Beverage Management, or related discipline
- A minimum of 6 years’ relevant food and beverage experience, with at least 2 years in a supervisory role; exposure in club or hotel industry will be advantageous
- Strong knowledge of inventory control, cost management, cleaning procedures, hygiene and occupational safety practices
- Proficient in written and spoken English and Chinese

Responsibilities
- Assist in maintaining high standard of daily operations in kitchen
- Responsible for production of western cuisine
- Ensure the food quality is up to members’ satisfaction as well as the Club’s standard
- Accommodate special requests and deliver up to members’ expectation
- Maintain a high standard of hygiene and safety in kitchen
Requirements
- A minimum of 10 years’ experience in western cuisine
- Creative menu planning, standard recipe production, basic costing and cost control principles
- Experience in banqueting, mass production and advance preparation
- Able to work with a multi-national team and assist or cooperate with others
- Willing to work on shifts, weekends and public holidays

Assistant Sports & Recreation Manager
Responsibilities
- Oversee the daily operation and service of Sports & Recreation Department
- Create, design, and implement a wide range of recreational and activity programmes
- Assist in planning and implementation of sports and recreation events on both local and international scales
- Prepare and manage the budgets for the Sports & Recreation department, including monitoring income and expenditure of programmes and the preparation of financial and management reports
- Supervise and motivate coaching staff in developing and maintaining tuition programmes for members
- Handle member enquiries and complaints
Perform other duties as assigned by management
Requirements
- Bachelor degree or diploma holder in Sports & Recreation, Leisure Studies or related discipline with a minimum of 4 years relevant experience, exposure in club industry will be advantageous
- Possess a strong background in event management, sports & recreation programme planning and facilities management;
- Great team player with strong leadership and problem-solving skills
- Excellent communication, presentation and customer servicing skills
- Attention to details with good planning, organizational, time management and critical thinking skills
- Experience in paper work handling, such as preparing accurate and concise meeting notes, work orders and reports in a timely manner
- Proficient in computer skills
- Proficient in both written & spoken English
- Possession of valid Hong Kong Driving License and First Aid certificate will be advantageous
- Willing to work on shifts, weekends and public holidays
