Executive Chef

 Responsibilities

  • Oversees and ensures the smooth, effective and efficient operation of the Western and Chinese kitchens
  • Develops recipes and techniques for food preparation and maintains a consistent high standard of food quality that exceeds the expectations of members and guests
  • Manages and supervises the food production
  • Menu planning for Club events or promotions
  • Ensures that high standards of sanitation and cleanliness are maintained throughout the kitchen areas at all times
  • Prepares financial budgets and monthly analysis, and recommends courses of action to maximise results by optimising revenues and minimising expenses

Requirements

  • Professional cooking training from accredited culinary school
  • 10 years relevant work experience preferably gained from renowned hotels, clubs or restaurant groups, with a minimum of 5 years in an Executive Chef role
  • Management experience include trace record in overseeing a Chinese kitchen
  • Excellent team player with strong leadership and communication skills
  • Good command of written & spoken English
  • Willing to work on weekends and public holidays

Banquet Supervisor

Responsibilities

  • Maintain the banquet operations and supervise the team, including casual workers
  • Provide efficient and attentive food & beverage services to meet members’ satisfaction in a professional and courteous manner
  • Ensure attentive to members’ and guests’ requests on food preparation and handle guest comments and complaints as required
  • Set up function rooms and reception counters, and maintain hygiene and cleanliness throughout the day
  • Ensure the adequacy of supplies and all incoming goods are in good condition 

Requirements

  • Secondary education or Diploma in food & beverage or related discipline
  • Minimum 4 years of relevant experience in the food and beverage industry, preferably in club or hotel industry
  • Experience in similar capacity would be advantageous
  • A good team player with strong leadership
  • Excellent communication skills and telephone manner
  • Good command of spoken English and Cantonese
  • Willing to work on shifts, weekends and public holidays

Captain

Responsibilities

  • Assist in the daily operations of the restaurant and supervise the team
  • Perform duties of Restaurant in-charge as and when required in the absence of Restaurant Manager
  • Provide efficient and attentive food & beverage services to meet members’ satisfaction
  • Serve and deal with members in a professional and courteous manner
  • Set up the restaurant to ensure products and condiments are ready
  • Maintain hygiene and cleanliness of restaurant throughout the day

Requirements

  • Secondary education or Diploma in food & beverage or related discipline
  • Minimum 2 years of relevant experience in the food and beverage industry, preferably in club or hotel industry
  • Experience in similar capacity would be advantageous
  • A good team player with strong leadership to motivate, train and supervise subordinates
  • Excellent communication skills and telephone manner
  • Good command of spoken English and Cantonese
  • Willing to work on shifts, weekends and public holidays

Commis Chef (All-Day Dining Restaurant – Chinese / Asian / Western)

Responsibilities

  • Assist in maintaining a high standard of day-to-day kitchen operations
  • Assist in preparing and cooking kitchen menu items as directed by the supervisor
  • Ensure that stocks, deliveries and wastage are all checked and recorded in line with the Club’s respective standard

Requirements

  • Certificate or equivalent vocational training in Food & Beverage is highly preferred
  • Minimum 1 year’s relevant experience in food and beverage kitchen operations preferably in hotel or hospitality industry
  • Well-mannered, well-versed in kitchen hygiene and customer-oriented
  • Good team player with strong communication skills
  • Good command in spoken English and Chinese
  • Good spoken and written Chinese. Basic command of English is an advantage.
  • Available to work on shifts, weekends and public holidays
  • Immediate availability will be advantageous

Waiter / Waitress

Responsibilities

  • Provide efficient and attentive food & beverages services to meet members’ satisfaction
  • Understand members’ needs and wants, introduce the menu, provide suggestions and take orders
  • Deal with members’ enquiries appropriately
  • Serve the members with a professional and courteous manner
  • Set up the restaurant to ensure products and condiments are ready
  • Maintain hygiene and cleanliness of restaurant throughout the day

Requirements

  • Secondary education or Diploma in food & beverage or related discipline
  • Minimum 1 year of relevant experience in the food and beverage industry
  • Experience in club or hotel industry would be advantageous
  • A good team player with pleasant and outgoing personality
  • Customer service oriented and able to anticipate members’ needs with good interpersonal skills
  • Excellent communication skills and telephone manner
  • Good command of spoken English and Cantonese
  • Willing to work on shifts, weekends and public holidays
